By popular request, we present the Iberico Pluma, which translates into feather-cut pork, per the good folks at Turner & George who I think introduce this ingredient best. Like the Secreto, the Pluma has a layer of flakey fat “feathering” the outside which renders into something akin to pure joy on the grill. Also, like Iberico Secreto, we think this cut of fine swine is best served at Medium, although you can still go Well if you prefer.
