One of the first program grading systems recognized by the USDA, Double R Ranch Signature is only the upper one third of all choice graded beef. Additionally, the cattle selected for Signature must meet strict age and tenderness requirements. The other Double R Ranch beef that’s still very good that’s available in your local grocery store? That’s the beef that didn’t qualify for the Signature label.
